Date with a Scorpio & Rooted Beet Thai Basil Risotto

Date with A Scorpio & Rooted Rice Cooker Beet Thai Basil Risotto 

Ingredients:

  • 1- 1 1/2 cup heaping cup Arborio Rice

  • 2 cups Broth

  • 1 cup coconut milk

  • Salt to taste

  • 2 tbsp butter ( I use plant based brands Melt, Miyoko’s, and Earth Balance,

  • 1/4 cup extra virgin olive oil

  • 1-2 cloves of garlic

  • 2 tbsp apple cider vinegar

  • 2 bunches of Thai Basil (You can standard basil as well)

  • 1 inch of ginger chopped

  • 1/2 of a large beet and roasted bell pepper (prepare before by steaming or broiling)

METHOD:

  1. Blend veggies, ginger, garlic, vinegar and broth till smooth.

  2. Put rice in rice cooker and cover with blended mixture, butter, oil, coconut milk, 1/2 of the basil and stir. Set to “cook white rice” setting and let cook. Takes about 30-45 minutes, may change based on your rice cooker.

  3. When ready salt to taste and pour into serving dish to enjoy - top with fresh basil and garlic infused olive oil if you have.
