A Golden Moment for Change + Salted Caramel Date Bars

The crunchy base:

  • 3 cups Chex mix (or other cereal your prefer)

  • 2 tbsp coconut oil (or vegan butter

  • 1/2 cup maple syrup

  • 1 cup nut/seed butter of choice ( I use SunButter)

  • Tsp of Vanilla Extract

Caramel:

Combine till smooth these ingredients

  • 5-8 pitted dates

  • 1/2 cup date syrup

  • 1/2 cup nut butter

  • Pinch of salt

Chocolate:

  • Melt 1 1/2 cup chocolate (I use @hukitchen)

OPTIONAL: Gold Cake glitter (avail online)

METHOD:

  1. Crush cereal with hands and add in all wet ingredients till combine. Spread out onto a parchment paper lined baking sheet and top with date caramel. Place in freezers set 2-4 hours.

  2. Coat bars In chocolate and enjoy as is, or let set more in freezer to harden again before eating.
