Self Romantic’s Curry Sardine Pasta

“Who could be more dangerous than a true romantic? They turn the ordinary into opulence.”

A fusion recipe inspired by a love of southern Italian and Indian food and my belief that the revolution will be powered by self romance (devotion to self care). It combines accessible ingredients for a beautiful meal worthy of 5 stars.

Ingredients:

  • Cooked DIY turmeric spaghetti (If Gluten Free I use this brand) METHOD: Cook pasta according to package in boiling water with 1 TBSP of turmeric added (rinse extra starch off if using GF pasta / rice pasta )

  • Chopped cilantro + parsley

  • Salt & pepper

  • Olive oil

  • Garlic infused oil (Low Fodmap option) or garlic (to taste)

  • 1/4 onion chopped (optional)

  • 1 tin of sardines

  • 2 Tsp of capers

  • 2-3 Tsp of masala curry Powder (or any Curry powder you prefer)

  • 1 tsp coriander and cumin (**optional** but really amps up flavors)

  • Zest of 1 lemon

How to make it:

  1. In a pan sautée your curry, capers, and garlic and onions (if using) with just the oil from sardine can till the onions and garlic are just light golden. If you’re not using garlic/onion for a Low Fodmap option skip to Step 2.

  2. Add in sardines and zest of a lemon and cook for a few minutes more till all of the flavors are combined.

  3. Add in your noodles and mix well adding in a few drizzles of olive oil to coat and ensure the noodles are separating.

  4. Add salt and pepper to taste and drizzle garlic infused olive oil to taste.

  5. Top with herbs and give it another good mix, and enjoy.
