The IDGAF Curry Kabocha Burgers

Inspired by Ocean’s Dragon kabocha burger in Venice, CA.

RECIPE

Kabocha “patties”:

  • 1 Small-Medium size kabocha squash

  • 1 Tbsp Curry Powder Mix

  • Salt & pepper to taste

  • 1 Tsp fresh chopped ginger

  • 3 cloves of garlic chopped

  • Coconut oil to coat (varies upon squash size)

Curry Mayo:

Mix all ingredients together till smooth:

  • 1/4 Cup mayo

  • 1-3 Tsp of Apple Cider Vinegar (too taste)

  • 3 Tsp Curry Powder

  • A handful of chopped cilantro and 2-3 green onion

  • Salt to taste

How to make the burger:

  1. Preheat oven to Broil setting for a quicker/crispier/caramelized bake or 450F.

  2. Slice squash into thick slices (as if you were mimicking a hearty quarter pound burger) and place in bowl.

  3. Seasonw with all seasonings listed and coat with coconut oil to cover.

  4. Bake in over on broil fro 15-20min, rotating pan halfway through cooking. Watch them so they don’t burn.

  5. Take out and serve on a toasted and buttered bun with curry mayo, bok choy replacing lettuce, avocado and sliced tomato.

  6. Enjoy. 👌🏽
